Last month we had some friends over for dinner. As a hobby, my wife and I host around 4-5 dinner parties a year with more elaborate menus. It’s been a while since our last one and there was a lot we wanted to do.

This was a very fun one to do, and as an added challenge the menu also had to be milk protein and gluten free.

The Menu

Amuse-bouche
Beet tartare • Gazpacho shot

Asparagus
Asparagus purée and freeze dried raspberries

Crayfish on a stick
Spruce salt and spruce infused butter

Scallops
Celeriac purée, apple and celeriac rings, and leek ash

Cod
Parsnip purée and smoked apple broth

Mushroom broth
Mini Hasselback potatoes, fried Jerusalem artichoke, chanterelle cream, and pan-seared mushrooms

Sous vide pork neck
Pumpkin purée, baked pumpkin, shredded cabbage, and beef jus

Reindeer medallion
Celeriac purée, baked celeriac, and plum reduction

Frozen chocolate mousse
Coconut sorbet, caramelized pecans, and passion fruit foam
